Easy Linguini and Shrimp - Serves 4

  • Boil water for pasta - add lots of salt like the sea for taste

  • Once boiled, add pasta and cook for time on package

  • In large saucepan, melt 3 tablespoons unsalted butter and 2 tablespoon olive oil over medium heat

  • Add 4 cloves garlic, finely chopped - careful not to burn

  • Saute for about 1 minute.

  • Add 2 1/2 pounds uncooked (peeled and deveined) Shrimp

  • Salt and Pepper to taste

  • Don’t overcook your shrimp. Make sure it’s pink but be careful not to over do it. About 5 min.

  • Lower heat

  • Add 1/2 cup white wine

  • Add 1/2 squeezed lemon juice and lemon zest

  • Add 1/2 cup chopped parsley

  • Add red chili flakes if you like a little spice

  • Cook for another 5 minutes or so

  • Once pasta is done, add it to shrimp and combine so pasta is covered in sauce. Use a little pasta water to thicken if need be.

  • Serve in a big bowl with squeezed 1/2 lemon, remainder lemon zest, more parsley and a swirl of olive oil.
