QUICK CHICKEN PICCATA!
Ingredients:
2 chicken breasts
1 cup flour
Salt and pepper
1 Lemon thinly sliced
2 Shallots – chopped
1 cup Chicken Broth
Bunch Parsley - chopped
½ cup Olive or Canola oil
2 tablespoons butter
Prep:
cut 2 chicken breasts in half
Salt and pepper both sides
Dredge in flour and shake off excess
Cook:
Coat pan with olive oil and let it get nice and hot
Place chicken breasts in 2 at a time to not crowd
Let them get brown on both sides – finish remaining chicken and remove from pan
Add in 1 tablespoon butter, chicken broth, ½ of the thinly sliced lemon
cook for 3 minutes or so letting the lemons sizzle
Add in shallots to frizzle
Add chicken back to pan and add remaining butter and cook more so everything mixes about 3-5 min
Remove chicken to platter and spoon sauce from pan on top of chicken
Add remainder of sliced lemon on top of chicken with some chopped parsley
