QUICK CHICKEN PICCATA!

Ingredients:

  • 2 chicken breasts 

  • 1 cup flour 

  • Salt and pepper

  • 1 Lemon thinly sliced 

  • 2 Shallots – chopped 

  • 1 cup Chicken Broth 

  • Bunch Parsley - chopped

  • ½ cup Olive or Canola oil

  • 2 tablespoons butter

Prep:

  • cut 2 chicken breasts in half

  • Salt and pepper both sides 

  • Dredge in flour and shake off excess

Cook:

  • Coat pan with olive oil and let it get nice and hot 

  • Place chicken breasts in 2 at a time to not crowd 

  • Let them get brown on both sides – finish remaining chicken and remove from pan 

  • Add in 1 tablespoon butter, chicken broth, ½ of the thinly sliced  lemon 

  • cook for 3 minutes or so letting the lemons sizzle 

  • Add in shallots to frizzle 

  • Add chicken back to pan and add remaining butter and cook more so everything mixes about 3-5 min

  • Remove chicken to platter and spoon sauce from pan on top of chicken

  • Add remainder of sliced lemon on top of chicken with some chopped parsley
