ROASTED TOMATOES

Ingredients:

  • Approximately 4 tomatoes thickly sliced

  • I cup olive oil 

  • 3 garlic cloves sliced 

  • 1 teaspoon good balsamic vinegar

  • ½ teaspoon sugar

  • Salt and Pepper to taste

Directions:

  • preheat oven to 350 degrees

  • Place tomatoes in cooking dish 

  • Sprinkle with salt and pepper 

  • Add Vinegar, Sugar and Garlic and stir 

  • Fill baking dish with olive oil to cover tomatoes. If not enough oil, make sure top is covered

  • Cook for 1 hour and check if they are at desired roast. If you want more, check every 5-10 min until done. 

  • Serve on eggs, pasta, chicken, anything you like.
